Chocolate Coconut Cashew Butter Cups

CHOCOLATE COCONUT CASHEW BUTTER CUPS

Not only are these SO delicious, they are allergen friendly so that anyone can enjoy them! Such a fun freezer treats for those warm summer days — or any time of year if you ask me!

This recipe is made with some of the healthiest treat ingredients that I always have on hand, such as glucose-friendly dark choc. chips (from GoodSam brand, MADDIE15 gets you 15% off!), cashew butter, and coconut butter! Can’t go wrong with any combination of these three for a fabulous blood-sugar balancing, sugar-free treat!!

Ingredient list

  • 2/3 cup Chocolate chips (1/3 cup for the top layer, 1/3 cup for the bottom!) (Glucose friendly ones — I use the GoodSam Foods brand!! MADDIE15 gets you 15% off!)

  • 1/4 cup Cashew butter (or any nut butter)

  • 1/4 cup Coconut Cream

  • 1-3 tablespoon sweetener (or to taste!)

  • Dash of vanilla extract

Steps

Step 1

Melt 1/3 cup of your chocolate chips! I do this by microwaving in 30 second intervals and mixing them until they are melted through! Then, pour your melted chocolate into the bottom of your ~6 silicone muffin liners. Freeze these for a few minutes until they are hardened.

Step 2

Combine the 1/4 cup of cashew butter, and 1/4 cup coconut cream from a can, (TIP: Put the leftover coconut milk in ice cube trays to use for smoothies or ice drinks!), sweetener of choice, and vanilla extract. Add in a pinch of sea salt if your cashew butter is unsalted!

Mix well and layer this over the hardened chocolate from the freezer. Smooth it out. FREEZE in freezer while you do the next step!

Step 3

Melt the remaining 1/3 cup of chocolate chips and pour this evenly as the top, 3rd layer. Freeze for a few hours. Tip: The chocolate hardens quickly, but the middle layer needs 3+ hours to fully harden!

Eat directly out of the freezer, or let them thaw a few minutes before enjoying. :)
