This recipe is made with some of the healthiest treat ingredients that I always have on hand, such as glucose-friendly dark choc. chips (from GoodSam brand, MADDIE15 gets you 15% off!), cashew butter, and coconut butter! Can’t go wrong with any combination of these three for a fabulous blood-sugar balancing, sugar-free treat!!
Ingredient list
2/3 cup Chocolate chips (1/3 cup for the top layer, 1/3 cup for the bottom!) (Glucose friendly ones — I use the GoodSam Foods brand!! MADDIE15 gets you 15% off!)
1/4 cup Cashew butter (or any nut butter)
1/4 cup Coconut Cream
1-3 tablespoon sweetener (or to taste!)
Dash of vanilla extract

Steps
Step 1
Melt 1/3 cup of your chocolate chips! I do this by microwaving in 30 second intervals and mixing them until they are melted through! Then, pour your melted chocolate into the bottom of your ~6 silicone muffin liners. Freeze these for a few minutes until they are hardened.
Step 3
Melt the remaining 1/3 cup of chocolate chips and pour this evenly as the top, 3rd layer. Freeze for a few hours. Tip: The chocolate hardens quickly, but the middle layer needs 3+ hours to fully harden!
Eat directly out of the freezer, or let them thaw a few minutes before enjoying. :)
