CREAMY REESE’S POPS

I LOVE these on warm summer days. The best weekend recipe to try! They are the perfect treat to have any time of the day, since they have those healthy fats to help keep your blood-sugar stable!

This recipe targets:

Dairy-Free | Gluten-Free | Grain-Free | Vegan

Blood-sugar balance is crucial to keep your energy stable throughout the day! That’s why I try to prioritize healthy fats/fiber/protein when combining with sweets. That way you don’t crash jusan hour or two later!

Ingredient list

  • 1 can coconut cream

  • ~3 tablespoons sweetener (+3 more tablespoon if you want) I used Whole Earth Sweetener allulose baking blend. You could try monkfruit, maple syrup, coconut sugar, sweetener of your choice, etc.

  • 3-5 tablespoon peanut butter (depends on how peanut buttery you want it to be!! ;))

  • Pinch of sea salt

  • Dash of vanilla extract

  • Optional: add 2 scoops of unflavored collagen for added protein & no change in flavor or texture!

Steps

Step 1

Mix ingredients well and pour them into popsicle molds. Place popsicle sticks in and freeze for 4-6 hours!

Step 2

Once frozen, you can add your melted chocolate, peanut butter drizzle, and sprinkle nuts, seeds, or other goodies on top and freeze them for a few minutes again to harden. I add a little coconut oil to and melt in the microwave. The coconut oil helps it harden quickly like a “chocolate shell.” ENJOY! :)

NOTES

The batter is so good, if you have any leftover, add it to coffee and it makes a sweet and creamy no-sugar added peanut butter coffee creamer!!! I tried it and highly recommend!
