Easy Holiday Salad
EASY HOLIDAY SALAD
This is the BEST salad! Seriously. Might just be my favorite salad combo ever. I first made it during the holiday season, but it hits the spot regardless of the time of year!
This recipe targets:
Added-Sugar-Free | Dairy-free | Paleo Friendly
This recipe doesn’t have any added sugars, and is also dairy-free! It has all the delicious healthy fats to keep you full and satiated, including a vegan feta made with coconut oil. It is one of the best cheese alternatives I’ve found!
Ingredient list
8 cups of salad greens of your choosing (mixed greens, arugula, frisée, etc.)
2 naval oranges
1 cup of pecans
2 cups of pomegranate seeds
1 cup of crumbled vegan feta or goat cheese (I like Violife brand for dairy-free)
2 avocado
1 cup of pistachios/almonds/walnuts, etc. (optional)
Dressing (more options below): Primal Kitchen Cilantro Lime

Steps
Step 1 - The Salad
The salad is pretty self-explanatory. Just combine all the ingredients (and any other added flavors you’d like!), blend, and adjust to taste! You’ll want to keep it refrigerated whenever you’re not eating it.
STEP 2 - DRESSING OPTION #1!
You can use whatever dressing you’d like (Primal Kitchen Cilantro Lime is my favorite with this recipe), but one delicious homemade option - Homemade Citrus Dressing! Blend all of the following ingredients until well incorporated, and enjoy!
Juice of one fresh squeezed naval orange
2 tablespoons of raw Apple Cider Vinegar
2 tablespoons of honey, pure maple syrup, or stevia/monkfruit
1/4 tsp of sea salt
Dash of Pepper
2 tablespoons EVOO (or avocado oil)
1 clove garlic, minced (optional)
1-2 tablespoons dijon mustard (optional)
Red wine vinegar to taste (optional)

Cilantro Lime Vinaigrette from Primal Kitchen is my FAVE! It goes perfectly with this salad.
