You can get frozen blackberries for this recipe all year round, but I’m telling you that there’s something delicious about having it during the summer blackberry season! Regardless of the time of year, I hope you enjoy!

Blackberry cobblers are one of those desserts that you often find are loaded with refined sugar and ingredients that don’t leave you feeling great. This one is paleo, sweetened with honey, and the best part is that you get it all to yourself!

Ingredient list

  • 1/2 cup frozen blackberries

  • Optional: a dash of lemon juice

topping

  • 2 tablespoons almond flour

  • 2 tablespoon coconut flour

  • 1/2 tablespoon tapioca flour

  • 1/4 teaspoon baking powder

  • 2 tablespoon melted coconut oil

  • 1 tablespoon honey

  • 1 teaspoon vanilla

Steps

Step 1

Add your frozen blackberries to a small or medium sized mug or ramekin. Then, mix all the ingredients in the topping in a separate dish. It will be batter-like! Drizzle or spoon the batter over the blackberries in the mug/ramekin.

Step 2

Microwave for about 1.5 minutes. You’ll want to be sure and watch it in the microwave — it will bubble over if you’re not careful!

If you want to go for an oven option instead, bake it for 7-14 minutes at 350 degrees.

Step 3

Serve warm and add your favorite toppings! I topped mine with low sugar, grain-free granola from the Purely Elizabeth brand. You could also do some dairy-free vanilla ice cream (my fave is no-sugar added vanilla from the So Delicious brand!). A scoop of homemade banana ice cream on top would be SO good too!
