Blue Spirulina Chia Seed Pudding

Spirulina has extremely powerful antioxidant and anti-inflammatory properties and can even aid in blood-sugar control and endurance. When you hear the word “superfood,” spirulina is IT!
Ingredient list
1 can coconut milk (or ~2 cups of creamy non-dairy liquid)
3 tablespoon water
1-3 tablespoon sweetener (I like 1/2 teaspoon of 100% pure monkfruit for no-sugar)
1/2 cup chia seeds
1/2 teaspoon blue spirulina (i use the brand Unicorn Super Foods)
Optional: 1 teaspoon lucuma (I use the brand Karen Berrios// use code MADDHEALTHY20 for 20% off!)
Optional: pinch of sea salt
Optional: 1 teaspoon vanilla

Steps
DIRECTIONS - WITH A BLENDER
Add everything to the blender, and blend for 1-2 minutes until it’s well incorporated and starts to thicken. Pour the mixture from the blender into a glass container and let it sit. Mix occasionally for 15-30 minutes until it’s pudding-like. You don’t have to blend it, but I like to!

The most fun part — TOPPINGS! Top with anything and everything your heart desires! My personal favorites (which keeps blood-sugar steady, too!) are berries, nuts, seeds, coconut flakes, and nut butter drizzle! ENJOY! :)
