Banana bread blueberry collagen bars

A crowd pleaser at any event, or a delicious ‘just because’ treat! So quick and easy. Really versatile and easily made vegan, too!

This recipe targets:

This recipe is SO good, made with healthy ingredients, and super easy to make. What more could you want?!

Ingredient list

  • 2 mashed bananas

  • 2 tablespoons olive oil (or coconut oil!)

  • 1/3 cup almond butter (or nut/seed butter)

  • 1 egg (flax egg for vegan!)

  • 3 tablespoon raw honey (maple syrup for vegan)

  • 1 teaspoon vanilla

  • 1 3/4 cup almond flour

  • 1/4 sea salt

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 3/4 cup blueberries

  • Optional: Cinnamon

  • Optional: 2 scoops of collagen (I use the bulletproof brand!)

  • Optional: Walnuts

  • Optional: Dash of lemon juice

Steps

Step 1

Preheat your oven to 350 degrees. Then, mix the wet ingredients together and the dry ingredients together separately from one another. Combine the two until well incorporated.

Step 2

Fold in your blueberries to the mixed batter. Line an 8X6 rectangular or 8X8 square pan or glass dish with parchment paper. Pour in the batter!

Step 3

Sprinkle more blueberries on top of the batter! Press them down. Bake for 25-40 minutes (depends on the size/depth of your pan/dish) until it no longer jiggles in the middle, and starting to brown on the edges.

Step 4

Let cool FULLY before cutting and serving! ENJOY! :)
