Ghee Mashed Potatoes

GHEE MASHED POTATOES

Creamy and dreamy mashed potatoes — who could say no?! These are SO tasty and made with real, whole ingredients. Another one of my favorite side dishes for Thanksgiving dinner, but I definitely would eat these all year long!

Many mashed potato recipes are made with dairy, and are often made creamy with butter that’s not real butter. My favorite thing about this recipe is the whole ingredients it calls for, with dairy-free options so everyone can enjoy!

Ingredient list (MAKES ABOUT 4 CUPS!)

  • 2 pounds potatoes (I love Yukon Gold)

  • 3 tablespoons ghee

  • 1/4 cup creamy dairy-free milk (I use original nutpods)

  • Salt and pepper, to taste

  • Chives — for topping

Steps

Step 1

Bring a large pot of water to a boil (add some salt!). After boiling, add evenly chopped potatoes (I cut into quarters). I leave the skin on, but you can peel them off if you’d like!

Step 2

After 20-30 minutes (and potatoes are tender with a fork), strain and let cool. Add potatoes and ghee, dairy-free milk, salt and pepper into a mixer or food processor. Mix until smooth and creamy. I like to leave some chunks!

Step 3

Top with chives, some more salt and pepper, and/or some more ghee! ENJOY! :)

NOTES

I prefer original nutpods, but you can also use creamy coconut milk or another milk of choice!
