Roasted Delicata Squash

ROASTED DELICATA SQUASH

This is one of the most delicious sides! It’s a fall (and Thanksgiving!) staple for me, and it’s so simple, too. You can make these savory OR sweet!

Delicata Squash is one of the most underrated foods/sides out there! It’s a complex carb packed with nutrients AND it tastes amazing! <3 I roast 1-3 delicata squash at a time, so double or triple this accordingly! :)

Ingredient list

  • 1 delicata squash

  • 1 tablespoon olive oil or avocado oil

  • 1/4 teaspoon salt (more or less to taste)

  • 1/4 teaspoon black pepper (more or less to taste)

Steps

Step 1

Preheat oven to 425 degrees. Clean your squash and cut off the ends to create two flat edges. Cut in half lengthwise and scoop out the guts/seeds.

Step 2

Cut into 1/4 to 1/2-inch slices, keeping the size of the slices consistent. Rub, toss, or spray with olive/avo oil and seasonings. Spread onto a parchment paper lined baking sheet in a single layer.

Step 3

Place in preheated oven and roast for about 35-40 minutes — flipping halfway. They are done when they are gold and crispy on the outside and tender on the inside. Sometimes I broil for ~3-5 minutes at the end to get them nice and crispy! If you choose to broil, watch carefully so they don’t burn!

Step 4

Enjoy immediately or store in glass container in the fridge for up to several days!
